Wild‐fermented and aged on lees, it delivers a wine of striking clarity and character. On the nose you’ll find mineral and saline tones — wet stones, ginger, lemon and lime zest, green apple and peach — with subtle floral notes. The palate is crisp and refreshing, showing bright citrus lift, pear, a touch of residual sweetness balanced by razor sharp acidity, and a creamy texture from lees-ageing that grounds the vibrant finish. At a modest ABV and with that tension between zesty freshness and old-vine richness, it pairs beautifully with shellfish, spicy Asian fare, creamy cheeses or even sashimi.
